Taste Bud Tuesday: Mountain Dew Cupcake Style
If you've known me for any length of time, then you've probably had the Mountain Dew cupcakes that are a household favorite. Most people would probably say this is my signature cupcake, which is really quite funny to me, especially since I'm not the one who actually likes Mountain Dew--my husband is.
I got engaged to Steven my senior year in college. Let's be honest, we would have gotten hitched way sooner than that, but mama said that I had to graduate from college first, and what mama says goes! Steven and I were very involved with FCA (Fellowship of Christian Athletes) while we were in college, so we had quite a few friends through this AWESOME organization. The girls of FCA all planned a wedding shower for me, which was TOTALLY UNEXPECTED. I remember arguing with my roommates about not wanting to wear a dress to the FCA house that day because I just didn't want to, but I caved and did as they suggested and made myself look nice. The thing I enjoyed most about the shower was that everyone brought a recipe (or a few), and I use quite a few of them often. One of my teammates knew how much Steven loves Mountain Dew, and her recipe was such a hit that anytime we go anywhere, the cupcakes are usually the thing that goes with us.
Y'all, these cupcakes are just so squishy (moist is probably the word you thought I was going for---but that word creeps me out) and if you make them in mini form, they're even better! The soda is what gives it it's squishiness, so if you're totally opposed to using Mountain Dew, you could just substitute that for sprite or 7UP.
I figured that on this first Taste Bud Tuesday I would share this beloved recipe with you. So, shout out to you, Taylor, for supplying us with the best cupcake (and only cupcake) recipe I ever use!
Mountain Dew Cupcakes:
Ingredients:
1 box lemon cake mix ( I usually buy Duncan Hines or Pillsbury)
1 box lemon pudding (sometimes I buy JELLO brand, but usually I'll get the off brand)
4 eggs
1 1/4 cups Mountain Dew
1/2 cup of vegetable oil (sometimes I'll substitute applesauce instead)
Directions:
Mix together cake mix, pudding, and eggs until well blended. Add oil into batter and mix for 2 minutes. Slowly pour in Mountain Dew and mix for another minute. Add cupcake liners and bake at 350°F for 13-17 minutes. Cool completely before topping with frosting.
Mountain Dew Frosting:
Ingredients:
4 cups confectioners sugar
1 cup butter, softened
1/8 cup Mountain Dew (about 1oz)
1 teaspoon lemon juice
Directions:
Cream butter until smooth. Slowly add confectioners sugar 1 cup at a time. Add lemon juice and Mountain Dew. If consistency is too thick after adding all of the confectioners sugar, add 1 tsp at a time of Mountain Dew until the frosting reaches the desired consistency.
